You might want to check out Lonely Planet's guide to the GAP year.  Penty of resources and good info in there about deferring.

Google Cornelius Bull and Holly Bull who run a company that helps with Gap Year plans and also Gail Reardon of Taking Off.
 
The book Cool Colleges for the Hyper-Intelligent, Self-Directed, Late Blooming and Just Plain Different recommends a website run by Bob Gilpin, www.timeoutassociates.com.  Bob Gilpin is apparently a consultant who charges a fee to refer families to these programs, but it still might be worth checking out.  This book also recommends the book Taking Time Off:  Inspiring Stories of Students Who Enjoyed Successful Breaks from College and How You Can Plan Your Own by Colin Hall and Ron Lieber.  I haven't read it yet, but it sounds interesting!
